Kitchen Staff Responsibilities

SATURDAY BEFORE CAMP

Kitchen Manager and CHWC Kitchen Staff

  • unpack and organize kitchen

  • shop at Sam’s for food and other supplies needed (see shopping list)

  • Sysco will deliver food Friday or Saturday, and a second delivery on TUESDAY – please check and count each box – make sure you receive everything on our order form.  Label all boxes with what day it will be served.  This will help you to know if all food items were shipped.

BREAKFAST 6:45AM 

  • 6:00AM - Kitchen Manager, CHWC Kitchen Staff, Merchandise/Kitchen Asst. and Assoc. Staff  prepare and set-up for breakfast

  • continental breakfast…juice-cereal-muffins-bagels-danish-donuts-fruit-(see menu)

  • one or two hot breakfasts, usually Wednesday, if two (Tues & Thurs) (Sysco will deliver) - you will still set-up a continental breakfast

  • have coffee ready the night before; coffee takes about 1 hour to brew  Adults come early for coffee (6:30).  Purchase a timer, works great!!

BREAKFAST CLEAN UP

  • left-over food will need to be wrapped and stored properly

  • wipe tables etc.

  • empty trash

  • sweep floors/mop when needed

 

KITCHEN MANAGER - TAKE INVENTORY ON HOW MUCH FOOD WAS USED…(you don’t want to over buy) CHWC staff will have to make several trips to Sam’s

KITCHEN MANAGER - CALL SYSCO TO ORDER…MILK, JUICE, FRUIT, CREAM CHEESE, CEREAL, other breakfast items etc.  FOR THE REST OF THE WEEK – you must call in this order MONDAY morning for the TUESDAY delivery (Tues. for a Wed. delivery). 

DINNER (check schedule for time) 

  • 1:30 – 2:00: Kitchen Manager, CHWC Kitchen Staff, and Assoc. Staff set-up and prepare dinner (see menu)

  • make drinks…keep ice water out at all times

  • make sure there is ice water out when campers return from sites at 3:00

  • SERVE DINNER (see schedule for time) you will need several people to serve and to be runners

DINNER CLEAN-UP

  • left-over food needs to be wrapped and stored properly

  • wipe tables etc.

  • empty trash

  • sweep floors/mop when needed

END OF CAMP

Kitchen Manager and CHWC Staff

  • donate any left-over food to local agencies…shelters, nursing homes etc.- Please get a receipt for items donated

  • take inventory and pack-up

  • mark all boxes KITCHEN/DESTINATION

KITCHEN MUST BE LEFT CLEANER THAN WE FOUND IT  MOST SCHOOLS ARE VERY PARTICULAR ABOUT THE KITCHEN…WE DO WANT TO BE INVITED BACK

 

The Kitchen Manager, one Kitchen Staff and the Merchandise/Kitchen Assistant must be in the kitchen each morning to prepare breakfast.  Two Kitchen Staff will make the Sam’s run daily, or every other day.  The kitchen staff that prepares breakfast does not have to make the Sam’s run.  This will rotate each day so the same people are not getting up each morning or making the Sam’s run.  (The Kitchen Manager will make a daily schedule for the week.)  All kitchen staff must help clean up after breakfast.  The Sam’s run will be made after breakfast and when possible the Enterprise truck will be used.
